Born in the fertile lands of the Albufera lagoon, the authentic Valencian Paella is the ultimate symbol of Spanish gastronomy. Unlike mixed seafood versions found elsewhere, the original recipe is a rustic masterpiece featuring short-grain rice, chicken, rabbit, bajoqueta (green beans), and garrofó (large lima beans).
